Falafel, the delicious vegan ball of goodness, might feel intimidating to make. However, the process is so rewarding, you’ll be coming back to it again and again. Here’s how to make the best falafel from your very own kitchen.

Ingredients:

  • 1 cup dried chickpeas
  • 1 small onion, roughly chopped
  • 3-4 cloves garlic
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon baking powder
  • Salt to taste
  • Vegetable oil for frying

Instructions:

  1. Place the dried chickpeas in a large bowl and cover them with cold water. Let them soak for at least 12 hours or overnight. Drain thoroughly before using.
  2. In a food processor, combine all ingredients. Pulse until the mixture reaches a coarse texture but not overly smooth.
  3. Form the mixture into small balls or patties using your hands. Place them on a baking sheet lined with parchment paper.
  4. Refrigerate the formed falafel for about 30 minutes. This helps them firm up.
  5. Heat vegetable oil in a deep frying pan over medium heat. Place the falafel into the hot oil, frying in batches until they turn golden brown and crispy.
  6. Once fried, remove the falafel using a slotted spoon and place it on paper towels to drain excess oil.
