Ingredients
- 2 pounds of potatoes (such as Russet or Yukon Gold)
- 1 ½ – 2 cups of all-purpose flour
- Salt, to taste

- Place the whole, unpeeled potatoes in a large pot. Bring the water to a boil and cook the potatoes 20-25 minutes.
- While the potatoes are still warm but cool enough to handle, peel off the skins. Use a potato ricer to mash the potatoes into a bowl.
- Sprinkle about 1 ½ cups of flour over the riced potatoes. Add a pinch of salt. Gently mix the flour and potatoes. The dough should come together and feel slightly sticky but not wet.
- On a floured surface, divide the dough. Roll each portion into a long rope, about ½ inch thick. Use a knife to cut the ropes into bite-sized pieces, around 1 inch long.
- Bring a large pot of salted water to a gentle boil. Carefully drop the gnocchi into the boiling water. As they rise to the surface, let them cook for an additional 1-2 minutes.
