Gnocchi might seem fancy and intimidating, but they’re quite easy to make it home. The potato-based Italian goodness is the perfect carb for a quick and easy dinner. Here’s an easy recipe to try out.

Ingredients

  • 2 pounds of potatoes (such as Russet or Yukon Gold)
  • 1 ½ – 2 cups of all-purpose flour
  • Salt, to taste

Instructions

  1. Place the whole, unpeeled potatoes in a large pot. Bring the water to a boil and cook the potatoes 20-25 minutes.
  2. While the potatoes are still warm but cool enough to handle, peel off the skins. Use a potato ricer to mash the potatoes into a bowl.
  3. Sprinkle about 1 ½ cups of flour over the riced potatoes. Add a pinch of salt. Gently mix the flour and potatoes. The dough should come together and feel slightly sticky but not wet.
  4. On a floured surface, divide the dough. Roll each portion into a long rope, about ½ inch thick. Use a knife to cut the ropes into bite-sized pieces, around 1 inch long.
  5. Bring a large pot of salted water to a gentle boil. Carefully drop the gnocchi into the boiling water. As they rise to the surface, let them cook for an additional 1-2 minutes.
  6. Once all the gnocchi are cooked, serve them immediately with your favorite sauce, and enjoy!
