If You Need Fast Cookies that Don’t Have Eggs or Dairy, These are the Cookies For You!

Back in the 1930s, there was a lot of food rationing because of the war. But people still wanted to eat freshly baked cookies, so the poor man’s cookie was invented.

This cookie doesn’t use any milk or butter because they were really difficult ingredients to get, and people didn’t want to waste large amounts on desserts. Regardless, these cookies are still super delicious, and so easy to make at home!

Ingredients

  • 1 cup of shortening, vegetable or regular
  • 1 cup of packed brown sugar
  • 1/2 cup of white sugar
  • 1/4 cup of water
  • 1 teaspoon of vanilla extract
  • 1 cup of flour
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 2 cups of oats

Instructions

  1. Using a hand mixer or a stand mixer, put the shortening and sugars together and cream them until it’s light in color and soft.
  2. Once it’s creamed, add in the vanilla and water until combined.
  3. In another bowl, mix together the flour, baking soda, and salt.
  4. Slowly add in the dry mixture into the wet until everything is just combined, but make sure not to over-mix it.
  5. Fold in the oats, and then scoop out the dough onto cookie sheets.
  6. Bake for 10-12 minutes at 350 F, or until golden brown. Allow to cool for a few minutes and then enjoy!
