Ingredients:
- 1 pound boneless chicken breast
- 12 ounces penne
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 2 garlic cloves
- 1 1/2 cups baby spinach
- salt to taste
- ground pepper to taste
- 1 cup heavy cream
- 1/3 cup white wine
- 1/2 teaspoon oregano
- 1 1/2 cup chopped tomato
- 1 tablespoon olive oil
- 1 cup heavy cream
- 2 tablespoons chopped parsley
Instructions
- Put the penne in a large pot of salted boiling water and cook the pasta according to the package instructions.
- Heat the olive oil in a skillet over medium heat. Season all sides of the chicken with salt, pepper, and oregano and then cook in the skillet for 8 minutes per side, until golden all over. Allow the chicken to cool for 5 minutes afterwards.
- Pour white wine into the chicken skillet. Add tomatoes, garlic, and cream and cook for 2 minutes until tomatoes soften slightly. Add mozzarella and parmesan and allow the cheese to melt.
- Season the sauce with salt and pepper according to taste and then add the penne, spinach, and parsley to the pan. Toss until the the pasta is covered in sauce and then serve.
