Ingredients:
- ice
- soda water
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/4 cup mint leaves
- 3/4 ounce Midori
- 2 Persian cucumbers
- 1 1/2 ounces white rum
Instructions:
- Boil the sugar and water in a pot over medium heat. Stir occasionally for about 3 minutes, until the sugar is fully dissolved.
- Remove from heat before adding cucumbers and mint to the pot. Allow the mixture to cool before straining into a jar or bottle. Refrigerate until use.
- Pour the rum, lime juice, Midori, mint, and 3/4 ounces of the cucumber syrup into a glass. Top off with soda water and mint and serve.
