Like Russian Food? Try This Recipe for Syrniki

You may think that you know about lots of breakfast foods around the world, but if you’re not Russian, you’ve probably never heard of this one. It’s called syrniki and it’s like a small pancake made from farmer’s cheese.

Typically eaten with sour cream or jam, they’re absolutely delicious and even boast a good amount of protein for a sweet breakfast food. So what are you waiting for? Try them out for yourself. You might just have a new favorite breakfast.

Ingredients

  • Farmer’s cheese
  • Eggs
  • All-purpose flour
  • Sugar
  • Salt
  • Vegetable oil
  • Jam and sour cream for serving

Directions

In a large bowl, combine crumbled farmer’s cheese with two eggs and mix well. Add flour, sugar, and salt, and mix until the batter is thick, more like a dough than a pancake batter.

Use your hands to form small pancakes, dredging both sides with flour and shaking off the excess. They should be about the size of your palm.

In a large skillet, heat vegetable oil over medium heat and cook the syrniki one side at a time, flipping when each side gets golden brown. Cool on a paper towel and serve with whatever toppings you’d like, although the traditional way is with sour cream and fruit jam.
