What makes her soups special is that they’re vegetarian and many of them can be made vegan by swapping out a few ingredients. These are three of our favorites.
Broccoli Cheese Soup
Most of Cookie and Kate’s recipes don’t have cheese in them, but if you love cheesy soups you have to try this one. The secret ingredient is the potatoes which are used to get the creaminess of the soup instead of cream and of course there’s cheddar cheese. Complete your meal with a sandwich or salad.
Creamy Roasted Cauliflower Soup
So cauliflower may not be the first vegetable you think of to go in soup, but we were surprised at just how creamy and delicious this soup turned out. It’s super creamy without there actually being any cream and you can add butter for more creaminess.
Roasted Butternut Squash Soup
You’ll want to save this recipe for Thanksgiving as it’s the perfect way to use butternut squash. It’s creamy and vegan with a rich flavor. Our favorite way to eat this soup is with a grilled cheese sandwich.
