Low Calorie Chia Seed Overnight Breakfast Pudding

How would you like to sleep in for another fifteen minutes in the morning and still have a healthy yummy breakfast? Overnight breakfasts, like overnight oatmeal, are increasingly popular and save you a lot of time in the morning.

This chia seed creation is simply amazing and is more like pudding for breakfast. Creamy coconut milk, chia seeds, and mango are a threesome you definitely have to try. Of course, you can also add any fresh fruit you desire.

This is a Paleo-friendly breakfast that is packed with Omega 3, fiber and is anti-inflammatory too.

Mix the ingredients together and pop into your fridge. Tell your friends.

Ingredients

  1. ¼ cup chia seeds (or pepita)
  2. 1 cup coconut milk (full fat or reduced, your choice)
  3. ½ tablespoon honey
  4. Fresh fruit and nuts

Instructions

  1. Mix chia seeds, coconut milk, and honey in a glass mason jar and put in your fridge
  2. Leave overnight
  3. Top with freshly cut fruit and assorted nuts
  4. Sprinkle with cinnamon or anything else your heart or palate desire
  5. Enjoy! Serve immediately.
