From cooking time to finishing with a satisfied grin on your face you need: 15 minutes. Set the alarm, and enjoy nutritious Mediterranean style scrambled eggs. (Cheese and mushrooms work too, or add a bit of feta!)
While you may be used to having oatmeal or smoothies for breakfast, this egg dish is a comforting meal that is worth rising a little earlier to prepare.
Ingredients
- 2 Large Eggs (organic if you have)
- A pinch or 1/8 teaspoon kosher salt
- A Pinch of red pepper flakes
- ½ tbsp. extra virgin olive oil
- Baby Spinach ½ Cup
- Chopped sundried tomatoes
- Finely chopped red bell pepper (about ¼, or a tablespoon)
- 1 tbsp. grated parmesan, more for garnish if you like
- Black pepper and parsley – optional
- Your choice of toast, ciabatta, wholegrain, toasted sweet potato (yes, it can be toasted!)
Instructions
- Beat or whisk eggs and salt until light and frothy
- Heat your oil in a pan or skillet for a minute
- Add pepper flakes and spinach
- Allow to wilt and stir a little
- Add tomato and peppers, and cook for about half a minute
- Add the eggs, and cook for another minute or so
- Remove from heat, the eggs will keep cooking in the pan.
- Add parmesan, and set out your toast.
- Serve, add garnish and ENJOY!
