How to Make Delicious, Healthy Asparagus Fries

Want fries without the unhealthy part? Well, now that the weather’s warmer, we’ve come up with the perfect french fry alternative. With all the crunch and flavor of the potato version, these asparagus fries are so quick and delicious, you’ll want to eat them all the time.

The crunch comes from an almond meal that adds healthy fats and fiber, and the cheesy flavor comes from the delicious dairy-free alternative, nutritional yeast.

It’s packed with B vitamins and is a great alternative to fat-laden regular cheese. And who doesn’t love fresh, green asparagus, that just happens to come in the right spear-like shape for fries?

Ingredients

  • 1 lb asparagus, trimmed
  • 1 large egg, beaten
  • 1/3 cup almond meal
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon sea salt

Method

  1. Preheat oven to 425ºF. Place the asparagus spears in a large mixing bowl. Pour over the beaten egg, and coat spears using your hands.
  2. Combine almond meal, nutritional yeast, and sea salt in a small bowl.
  3. Shake excess egg off the asparagus and toss spears in the almond meal mixture.
  4. Arrange the asparagus spears on the baking sheet. Bake for 10 -12 minutes, until light golden brown. Serve hot.
