This mushroom and barley soup is so simple, that anyone can make it. The first step is to get a pot and add the olive oil. Once it’s heated you can add the carrots and onions. Cook them very well until the vegetables become soft. You can now add the mushrooms and cook for several more minutes. Once the mushrooms turn soft, include the barley and the vegetable broth in the pot. Leave the mixture to simmer for around 10 minutes. Stir it well and add salt and pepper.
