Omelet in a Cup? Yes Please!

Eggs are one of the most convenient and healthy protein-rich foods you can find. There are so many ways of preparing them, but there’s something about a perfect omelet that ticks all the right boxes.

But let’s face it. It’s a hassle to haul out the skillet, making sure that it’s perfectly greased to prevent the omelet from sticking. Then you’ve got to wait for the butter to melt, before pouring in the beaten egg and waiting (again!) for it to cook.

Too much schlepp, I tell you. So what to do? Well, we’ve got the perfect solution for omelet-lovers, and it’s ready in under five minutes. It’s called Omelet in a Cup, and we think it’s pretty great. Here’s how to make your own.

Ingredients

Cooking spray
2 eggs
1/4 cup frozen Southwestern blend vegetables
1 slice deli ham, chopped
2 tablespoons Cheddar cheese, shredded

Method

Spray the inside of a mug thoroughly with cooking spray.

In a small bowl, beat the eggs together. Then add the frozen vegetables, the chopped ham, and the cheese. Season well with salt and freshly-ground black pepper.

Place the mug in the microwave and cook on high for 3 minutes.

Voila!
