One Day Vegetarian Paleo Breakfast Challenge

The vegetarian paleo breakfast challenge is a way to challenge yourself to eat more creative food and think outside of the box. There are some important considerations to remember that make this a little harder. Many proteins that are commonly eaten by vegetarians are not allowed.

Forget cheese, quinoa, peanuts, tofu, wheat, legumes and…well, for Paleo followers you will have to skip meat, and bacon and add vegetables. A lot of them.

Eggs are a great choice too, and you’ll need to get creative. How about baking an egg in an avocado?

What about Mexican omelet? Mediterranean grilled tomatoes with sweet potato toast or mushrooms with peppers, and spinach?

The great benefit to your body is you will feel light and boost your immune system with those great choices too!

The health benefits don’t stop with boosting your immune system, you will feel energized and your body won’t be digesting a heavy meal.

The important thing is to get creative with vegetables. They will add color and variety to your meal. Think more how you can use eggs too, such as egg rolls, or scrambled eggs with vegetable flavored from different countries – think India, Italy, and Greece.
