Protein-packed Breakfast recipes, Minus the Meat

Whether you are trying to cut down on your meat intake or if you are a vegetarian, getting the right amount of protein in your diet can sometimes be quite challenging. Breakfast is the meal that is supposed to fuel kickstart your day.

Got a little creative in the kitchen this morning to develop some new recipes and could not be more in love with this one on the right 😍 Have you ever tried nut butter 🥜 and blueberries with chia seeds?! I had to improvise since I’m out of my favorite @udisglutenfree toast, but it was delicious on a rice cake! Definitely one of my new staples! ❤️On the left is a favorite of mine and a classic! An @organicvalley egg 🍳 sprinkles with @traderjoes everything but the bagel seasoning! If you don’t get enough protein in your breakfast, you will always run a bit low on energy. Here are some meatless recipes that are packed with proteins to get you going in the mornings

Banana Cashew overnight oats – If you don’t want to add sugar to your breakfast, mash banana, and chickpeas together to mix with your oatmeal. Let it rest overnight and add cashews in the morning.

Chickpea waffles – Chickpeas are packed with protein and are virtually flavorless. Whip up your favorite waffle recipe, but use chickpea flour to boost the protein. Add your favorite topping and you are good to go.

Huevos Rancheros Bowl – You don’t have to go to a restaurant for this delicious breakfast treat. If you have eggs, refried beans, some roasted peppers and onions (or any other roasted veg), you can make this classic at home.

Mini frittata egg bites – Versatile and easy to prepare. Whisk some eggs together, add your favorite ingredients and bake in the oven until golden brown. Perfect breakfast bites.
