Quick and Easy Breakfasts for When you Don’t have Time

We all know that breakfast is the most important meal of the day, but sometimes it feels impossible to get it together before rushing out the door. Don’t worry. We’ve got some quick and easy breakfasts that take only three ingredients and taste delicious. What’s not to like about that?

Baked Hash Browns

These delicious hash browns are baked, so they’re healthier for you than fried. Make them ahead and just bake to complete.

  1. Preheat the oven to 425 degrees F.

2. Boil 4 medium russet potatoes until fork tender, then drain. Allow cooling before peeling them.

3. Grate using the large side of the grater. Place potatoes in a large bowl, and toss with 2 teaspoons of salt. Line a large baking sheet with parchment.

4. Form the potatoes into patties of whatever size and thickness you prefer. Brush the tops with a little olive oil, and sprinkle with salt.

5. Bake until crisp and brown on both sides (approximately 50 minutes). Turn once during cooking.

Granola, fruit and yogurt parfait

Simply layer ½ cup of granola, ½ cup of plain yogurt, and 4 sliced strawberries for a quick and tasty start to the day.
