Quick and Easy Recipe for Delicious Veggie Pie

This pie is the original quick and easy comfort food. Blending Cheddar cheese and broccoli, this pie even makes its own crust while it is cooking. So, why not try this delicious vegetable pie for any meal of the day.

It’s a protein-packed way to get your nutrients on for breakfast and makes the perfect lunch or supper with some wilted greens or salad.

Ingredients

2 cups, broccoli or cauliflower florets, chopped

1/3 cup onion, chopped

1/3 cup green bell pepper, chopped

4 oz Cheddar cheese, shredded

½ cup Original Bisquick™ mix

1 cup milk

½ teaspoon salt

¼ teaspoon freshly ground black pepper

2 eggs

Method

Heat the oven to 400º Fahrenheit. Grease a 9-inch pie plate.

In a medium-sized saucepan, bring 1 inch of salted water to the boil. Add the broccoli or cauliflower, cover and bring to the boil. Boil for about 5 minutes or until almost tender. Drain for 10 minutes.

Mix cooked broccoli or cauliflower with the onion, bell pepper, and cheese, and place into the pie plate.

Combine the rest of the ingredients, and pour into the pie plate.

Bake for 35 to 40 minutes until golden brown.
