Quick Pancakes You Can Eat Even If You’re Avoiding Carbs

If breakfast is your favorite meal of the day and you’d like to treat yourself to tasty pancakes, that doesn’t mean you have to compromise your diet or break any promises you made to yourself. We have a recipe for healthy pancakes that taste even better than the original ones and you can eat them whenever you want, completely guilt-free.

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup cream cheese
  • 4 eggs
  • 1 tsp grated lemon peel
  • Some butter for frying

Instructions

  1. Mix almond flour, cream cheese, eggs, and lemon peel in a bowl until you get a smooth batter. 
  2. It’s ready for frying! Melt a tsp of butter in a pan, then pour some batter over it. The quantity will depend on whether you want smaller or bigger pancakes. 
  3. Fry for a few minutes, then turn to the other side and leave for another few minutes. 
  4. Serve with your favorite pancake topping! If you want to stay on the healthy side, you can blend some yogurt and fruits and pour it over the pancakes, then decorate with frozen fruit.

I think these fluffy almond meal & spelt pancakes are my new favourites! I topped mine with banana, peanut butter, Greek yoghurt and cacao nibs 😍🥞🍌🥜⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The recipe is simple with ingredients that you should have on hand at home 🤗 you can substitute the spelt flour with plain or wholemeal flour, or try 3/4 cup oat flour instead and let me know how you go! Here’s the recipe (makes 3-4 pancakes)👇🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry ingredients:⠀ • 1/4 cup almond meal⠀ • 1/2 cup spelt flour⠀ • 1/2 tsp baking powder⠀ • 1/4 tsp baking soda⠀ • pinch of salt⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wet ingredients:⠀ • 1 egg⠀ • 1 tsp vanilla extract (optional)⠀ • 1/4 cup milk (if using plant based milk, add 1 tsp apple cider vinegar)⠀ • Extra virgin olive oil or coconut oil, for cooking⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method:⠀ 1️⃣ Mix dry ingredients together. Add wet ingredients and mix until just combined.⠀ 2️⃣ Heat oil in frying pan to medium heat. Add spoonfuls of batter and flip pancakes when bubbles on top start to pop.⠀ 3️⃣ Remove from pan when golden brown on both sides and top with fruit, yoghurt and nut butter!
