Spices

Depending on what your palette is like, you can use whatever spices you want in the pickles. For example, to make a Morrocan inspired carrot pickle, use whole coriander seeds, ginger, and fresh turmeric. To make a basic dill base, put in dill seeds, garlic, and red chili flakes. Put the spices into the jars with the pickling liquid and add your vegetables!

Brine

The brine is the key to any good pickle. The brine for these pickles is 1 part water to 1 part vinegar. But, the type of vinegar you choose is all up to you! You can use white wine vinegar, apple cider vinegar, plain distilled vinegar, or a mix of your favorite ones. To make the brine, put 1 part water to 1 part vinegar in a saucepan along with 1 tablespoon of sugar and salt each. Bring to a boil and pour into the jars you’ll be using.
