Ice cream might be disregarded as a kids dessert, but this kind is for the grown-ups to enjoy!

What better way to enjoy a glass (or a couple) of wine than in a form which will also keep you cool in the summer heat?

And while it may be considered improper to drink wine before 5 o’clock, it’s always time for ice cream.

Ingredients

• 1 bottle of your favorite wine (merlot works well)
• 2 tbsp vanilla yogurt/heavy whipped cream
• 3 tsp sugar

Method

  1. Boil your wine and sugar in a pot until it comes to a syrupy consistency.
  2. Remove from the heat and let it cool before placing it in ice cube trays to freeze.
  3. Once frozen, place ice cubes in a food processor and blitz lightly until slightly crushed.
  4. Add in your yogurt or cream and continue to whiz until mixture has the consistency of ice cream.
  5. Scoop into bowls and serve immediately or place back into the freezer to set slightly if desired.
