Ingredients

The basic ingredients for the pancakes are a very soft banana, 1 egg, and gluten-free oat flour. For the flour, all you need to do is put gluten-free oats in a blender and blitz until it’s a fine powder.

Method

  1. Mash the banana until it’s completely soft.
  2. Add in an egg and mix until well combined.
  3. If you want the flavor to really come alive, add some cinnamon, nutmeg, vanilla extract, and a pinch of salt. You can also add cocoa powder if you want something really decadent.
  4. Mix everything together if you’re adding the extras.
  5. Then, add in the oat flour until the batter comes together. Make sure it’s thicker than regular pancake batter, about the consistency of muffin dough.
  6. Put some coconut oil in a pan. Use a 1/4 cup measuring cup and fry 3-4 at a time.
