Ingredients
- 4 cups of fresh or frozen corn kernels
- 1 medium onion
- 2 cloves of garlic
- 2 tablespoons butter or olive oil
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or whole milk
- 1 teaspoon thyme leaves
- Salt and pepper to taste
- Optional garnishes: chopped fresh herbs (chives, parsley, or cilantro), crispy bacon bits or grated cheese
Instructions
- If using fresh corn, remove kernels. For frozen corn, follow package instructions to thaw. Set aside.
- Melt butter (or heat oil) in a pot. Add chopped onion and minced garlic and saute until translucent, about 3-4 mins.
- Stir in corn, and cook for 5-7 mins for caramelization.
- Next, add broth and thyme, and bring to a boil. Simmer for 15-20 mins. After that, blend the soup using an immersion blender until smooth.
