The Perfect Corn Soup Recipe

Picture this: you’re curled up on the couch, wrapped in a cozy blanket, and there’s a bowl of steaming hot corn soup in your hands. This soup, with its rich, velvety texture and sweet corn flavor, has a way of making us feel all warm and fuzzy inside. And here’s the perfect recipe to try out. 

Ingredients

  • 4 cups of fresh or frozen corn kernels 
  • 1 medium onion
  • 2 cloves of garlic
  • 2 tablespoons butter or olive oil
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or whole milk
  • 1 teaspoon thyme leaves 
  • Salt and pepper to taste
  • Optional garnishes: chopped fresh herbs (chives, parsley, or cilantro), crispy bacon bits or grated cheese

Instructions

  1. If using fresh corn, remove kernels. For frozen corn, follow package instructions to thaw. Set aside.
  2. Melt butter (or heat oil) in a pot. Add chopped onion and minced garlic and saute until translucent, about 3-4 mins.
  3. Stir in corn, and cook for 5-7 mins for caramelization. 
  4. Next, add broth and thyme, and bring to a boil. Simmer for 15-20 mins. After that, blend the soup using an immersion blender until smooth.
  5. Finally add cream (or milk), salt, and pepper. Warm it on low heat, garnish with your favorite topping, and enjoy.
