Making pastry to top your casserole can be one of the most time-consuming parts of preparing this meal. But by using tortillas, you can quickly cook up a delicious casserole for lunch or a weeknight dinner. Here’s a quick recipe to help you out.

Ingredients

  • 6-8 large tortillas
  • 2 cups of your preferred casserole filling (e.g., chicken, beef, vegetables)
  • 2 cups shredded cheese
  • 1 cup sauce or gravy (e.g., tomato sauce, enchilada sauce, or cream sauce)
  • Seasonings and spices to taste (e.g., salt, pepper, garlic powder)
  • Optional toppings: sliced olives, diced tomatoes, green onions, or chopped cilantro

Instructions

  1. Begin by cooking your preferred casserole filling (seasoned ground beef, shredded chicken, or a vegetable medley). Set it aside.
  2. Next, spread a thin layer of your chosen sauce or gravy on the bottom of the dish to prevent sticking. Place your first tortilla in the dish, covering the bottom. Add a portion of your cooked filling, followed by a layer of shredded cheese.
  3. Repeat this process until you’ve used up all your tortillas and filling, finishing with a layer of cheese on top.
  4. Bake in a preheated oven at 350°F for about 20-25 minutes. Let the casserole cool for a few minutes. Slice and enjoy.
