Is there anything better than a light sponge cake, dripping with honey? Check out this recipe which makes delicious, golden cakes that may be a little too hard to resist!
Honey Cakes
Ingredients (to make 12):
- 1 cup of plain flour
- 1 teaspoon of baking powder
- 3/4 cup of caster sugar
- 1 1/4 cup of unsalted butter
- 2 eggs
- 2 tablespoons of milk
- 6 tablespoons of honey
Instructions:
- Heat the oven to 340 degrees and grease and line a muffin tray.
- In a large mixing bowl, cream together 3/4 cup of butter and the caster sugar.
- Sift in the flour and baking powder. Stir through, then whisk in the eggs and milk.
- Stir through 2 tablespoons of honey.
- Pour the batter into the muffin cases and cook for 15 minutes.
- Remove from the oven and allow the cakes to cool.
- Meanwhile, heat the remaining butter and honey in a pan. When it has melted to a smooth consistency, pour a little over each cake, making sure the honey glaze soaks through the sponge.
- These cakes will keep for up to 5 days in an airtight container.
