These Honey Cakes Are Hard To Resist

Is there anything better than a light sponge cake, dripping with honey? Check out this recipe which makes delicious, golden cakes that may be a little too hard to resist!

Honey Cakes

Ingredients (to make 12):

  • 1 cup of plain flour
  • 1 teaspoon of baking powder
  • 3/4 cup of caster sugar
  • 1 1/4 cup of unsalted butter
  • 2 eggs
  • 2 tablespoons of milk
  • 6 tablespoons of honey

Instructions:

  1. Heat the oven to 340 degrees and grease and line a muffin tray.
  2. In a large mixing bowl, cream together 3/4 cup of butter and the caster sugar.
  3. Sift in the flour and baking powder. Stir through, then whisk in the eggs and milk.
  4. Stir through 2 tablespoons of honey.
  5. Pour the batter into the muffin cases and cook for 15 minutes.
  6. Remove from the oven and allow the cakes to cool.
  7. Meanwhile, heat the remaining butter and honey in a pan. When it has melted to a smooth consistency, pour a little over each cake, making sure the honey glaze soaks through the sponge.
  8. These cakes will keep for up to 5 days in an airtight container.
