Peanut butter and chocolate is such an incredible combination. You get the creamy nuttiness of the peanut butter and the chocolaty decadence cannot be beaten. These cookies are really easy to put together and have an amazing texture so let’s get to baking!
Recipe
- To start, making the peanut butter filling by combining 1 cup of peanut butter with 1 cup of powdered sugar. You can either do this by hand or in an electric mixer.
- Scoop the peanut butter mixture onto a tray and freeze for at least 30 minutes so you can work it easier later.
- With a hand or stand mixer, drop in 1 stick of softened unsalted butter, ⅔ cup of packed brown sugar and ¼ cup of regular sugar and cream it together.
- Add an egg and a splash of vanilla after a couple of minutes of mixing.
- In a bowl, mix 1 ½ cup of flour, ½ teaspoon of baking powder and baking soda, ½ teaspoon of salt, and 1 teaspoon of instant coffee.
- Add the dry ingredients into the wet slowly until everything is incorporated.
- Mix in the chocolate by hand and then start forming the cookies by flattening the peanut butter balls slightly, taking a small scoop of dough and wrapping it around the peanut butter.
- Bake the cookies at 375 F for 10 minutes and cool on a rack before enjoying.
