This Stewed Tomatoes Recipe is a Life Saver

Stewed tomatoes are an extremely valuable thing to have on hand in your kitchen.

They have tons of uses, from being the base of pasta sauces to working great as a side dish for Italian-inspired meals.

Here’s an easy stewed tomatoes recipe that you can use for your meals instead of the boring canned variety.

Ingredients

  • 10 large tomatoes or 15 medium-sized Roma tomatoes
  • 1 tbsp salt
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 1 tsp ground black pepper
  • 1 tsp rosemary
  • 1 onion

Start off by bringing a very large pot of water to boil. As the water heats up, prepare an ice bath consisting of cold water and ice cubes in another large bowl.

Once the water is boiling, plunge the tomatoes into the water for 30 seconds. After this time is up, immediately dunk the tomatoes into the ice bath that you’ve prepared.

After they’ve cooled down, peel the skin off of the tomatoes with your fingers. It will come off easily.

Slice the skinned tomatoes into bite-sized chunks and set aside. Dice the onion and set aside.

Place another large pot on the stove and set the heat on a medium level. Place the diced tomatoes and onion into the pot, cover, and allow to simmer for 30-45 minutes.

You can use the stewed tomatoes immediately, freeze them, or even can them. It’s up to you. Enjoy!
