This Eggplant Cream Recipe Will Blow Your Mind

Eggplants, also known as aubergines, are often considered as vegetables but are actually fruits. They can vary in color and size and they have a good amount of health benefits. Eggplants are rich in nutrients, good antioxidants, they can help with weight loss etc.

Consider introducing more eggplants into your diet. Start with this yummy eggplant cream!

Ingredients:

  • 2 bigger eggplants
  • 150 gr mayonnaise
  • 1 purple onion
  • 2 or 3 garlic cloves
  • parsley
  • salt and pepper

The Making:

Cut the eggplants lengthwise, then put them onto a baking sheet and bake them for about 1 hour on 220-220°C, or until they turn brown.

When they are ready, scrape out only the middles; the rest of the eggplants is bitter.

Put them into a sifter and leave for about 1 hour to drain.

While they drain, cut the onion, the garlic cloves, and the parsley into small pieces; you can use a blender if you like.

Then, when the eggplants drained out, add all the ingredients and give it a good mix.

Leave it to cool down and serve it with crackers, French bread or use it as a tortilla dip.
