This Noodle Kugel is a Sweet and Savory Side Dish

Kugel is a traditional Eastern European Jewish dish eaten at large celebrations and holidays. The dish can be made with either noodles or potatoes, the noodle version being on the sweeter side, but still served with the meal. Kugel is a great way to add a new type of side dish to your dinner party and serve up something unexpected yet delicious.

Ingredients

For this noodle kugel, the key ingredient is wide egg noodles. These noodles are cooked and baked, giving the kugel a crispy exterior, and combined with the other ingredients, a soft and chewy inside.

Method

  1. First, grease a rectangular baking dish.
  2. Then, place raisins in a bowl and pour over hot water to let them soak. This will make them plumper and ensure they don’t burn during baking.
  3. Put the egg noodles into a pot of boiling water and cook as long as it says on the package.
  4. In the meantime, in a blender mix cottage cheese, cream cheese, eggs, cinnamon, and sugar. Blend until well combined.
  5. Drain the noodles and the raisins and combine them.
  6. Pour the cheese mixture over them along with the so everything is well covered.
  7. Place the noodles in the baking dish and bake for 30-45 minutes until the top is golden brown.
