Cakes can be scary, but this Mexican-inspired chocolate cake is simple and always delicious.

Ingredients

  • 1 cup of unsalted butter
  • 1 cup of whole milk+1 teaspoon of white vinegar combined
  • 6 tablespoons of unsweetened cocoa powder
  • 1 1/2 teaspoons of cinnamon
  • 2 eggs
  • 1/2 cup of water
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking soda
  • 2 cups of flour
  • 2 cups of sugar
  • 1/2 teaspoon of salt

Recipe

  1. Preheat the oven to 375 F and grease a sheet pan.
  2. In a small pot, put in the butter, milk mixture, cocoa powder, and cinnamon.
  3. Melt everything over medium-low heat and mix together to combine until the butter is melted and the mixture is almost boiling and turn off the heat.
  4. In a small bowl, add the eggs, water, and vanilla, and mix well.
  5. In a large bowl, add the flour, sugar, salt, and baking soda and mix well.
  6. Add the egg mixture to the dry ingredients until just combined, and then add in the butter mixture until well combined.
  7. Pour the mixture onto the sheet pan, tap a few times to get rid of air bubbles, and then bake for 20-25 minutes or until a toothpick comes out clean.
  8. Make your own frosting or use storebought, but add in a little extra cinnamon either way if you want the cinnamon flavor to be bolder, and enjoy!
