This Vegan Ice Cream is More Than Nice

Summer is almost over, according to the calendar. But the good news is, ice cream is considered a season-defying food. Great in hot or cold weather, ice cream is the perfect treat — and, thanks to this recipe, incredibly easy to make.

But we’re pretty sure that our favourite part about this ice cream is that it’s healthy! Yep. Banana ice cream is vegan, gluten free, carb friendly, and offers your daily dose of fruit and veggies. As if you needed another excuse to eat ice cream!

Ingredients

• 4 frozen bananas, peeled
• ¼ cup cocoa powder
• 2 tbsp peanut butter

Method

  1. Place the frozen bananas, cocoa powder, and peanut butter into your blender.
  2. Blend the bananas on high speed using the plunger to push the bananas down as needed. After 2-3 minutes the ice cream will run smoothly.
  3. Either eat right away or freeze for 2 hours so that it is hard enough to scoop into cones.
