Tomato season is upon us, and that means a bounty of red, juicy beauties will be featured in your kitchen soon enough. Tomatoes are a key ingredient in so many types of cuisines, so try some new combinations this summer.

Ethiopian Tomato Sauce

This sauce is flavorful, thick, and perfect for both pasta or on grilled vegetables. It’s made with the same technique as Italian sauce, but the key to this sauce is the spice blend native to Ethiopia called berbere. If you can’t find this spice blend in the grocery store, you can make it yourself at home with chili peppers, garlic, ginger, basil, korarima, rue, ajwain, nigella, and fenugreek.

Sofrito is the Spanish version of a tomato sauce. This sauce combines peppers with paprika to give it a classic Spanish flavor profile. You can use this sauce as the base for a chicken dish, scramble it with eggs, or eaten with rice. No matter how you eat it, you’re going to be very pleased.

Chinese Tomato Sauce

What makes this sauce special is the addition of ingredients like vinegar, soy sauce, and hot chillis. This is the perfect base for chicken wings or any type of protein dish.
