Fruit salad is a beloved and healthy way to end a meal, and in summer it’s great to enjoy the perfectly ripe fruit in season. However, in winter many fruit salads depend on flown-in fruit, or even canned, which doesn’t have the flavor profile of fresh. In winter, why not turn to this recipe which uses high-quality dried fruit to create a stunning dessert, which can also double up as a porridge topping for breakfast.
Ingredients (to serve 4)
- 1 cup of dates
- 1/2 cup of dried apricots
- 1/2 cup of dried figs
- 1/3 cup of fresh apple juice
- 1/2 cup of warm water
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 cup of mixed nuts
Instructions
- Mix the cinnamon, nutmeg and apple juice with the water.
- In a large bowl, mix the fruit with the liquid and leave to soak for up to half an hour.
- Scatter over the nuts and serve the salad with yogurt, ice cream or as it is.
Healthy and tasty, this dried fruit salad is a great winter winner when the fresh stuff is nowhere to be seen in the shops!
