Smoked salmon on a bagel covered with cream cheese is something out of this world. But enjoying this simple and tasty snack is a no-go if you’re a vegan. Or at least it was until now.

It turns out that it’s really easy to make a vegan version of smoked salmon while keeping the deliciousness of the original. And all you need for it are carrots and some spices.

Vegan smoked salmon made out of carrots has been a hit in food circles for some time now. People discovered that slicing the carrots into thin sheets and marinating them can not only replicate the consistency of smoked salmon but also the flavor.

There are several recipes for vegan smoked salmon out there, but our favorite is the one from Montreal-based vegan blogger Angèle AKA veganmontreal.

Ingredients

  • 4-5 carrots
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon liquid smoke
  • 1 teaspoon soy sauce
  • Pinch of black pepper

Instructions

1. Cut the carrots to thin sheets using a knife or a peeler. Give the carrot sheets a generous scrub with sea salt.

2. Place the carrot sheets on a baking tray and pop them in a preheated oven (350F) for 15 minutes.

3. Combine the olive oil, lemon juice, liquid smoke, soy sauce, and pepper in a bowl. Submerge the carrots in a bowl and let them marinate for 30 minutes.

4. Several other recipes recommend adding other spices like smoked paprika and garlic powder to enhance the flavor. Also, the longer you leave the carrots to marinate, the more flavorful they’ll be.

5. Place the marinated carrot sheets on the baking tray again and bake for another 15 minutes.

6. Line them on a bagel covered with vegan cream cheese and enjoy.
