Mayonnaise is a great condiment for sandwiches or tuna salad, as it adds creaminess and richness to a dish. Since it doesn’t have a strong flavor of its own, it’s common to play with mayonnaise by adding different flavors and herbs to play up the flavor of a dish. It’s very common to see certain versions of this called aioli, and it’s not hard to make at home. Here are a few flavors to try, including aioli.

Aioli

Though aioli is really a Catalan sauce, it’s often used as the name of garlicky version of mayonnaise. To make this aioli, combine mayonnaise, minced garlic, lemon juice, and salt. You can also add some mustard or horseradish for an extra kick.

Sriracha Soy Mayo

For a sweet-and-spicy mayonnaise with a great umami flavor, mix up a few squirts of Sriracha and a dash of soy sauce in your mayonnaise. This is also a great way to make mayo specifically for tuna salad or a fish sandwich.

Smoky Aioli

Everything tastes better with a little smoke, and mayonnaise is no exception. Combine mayonnaise, liquid smoke, and/or smoked paprika, salt, and garlic if you like. This is perfect for putting on top of meat or fish.
