Peanut brittle is such a fun and different kind of sweet. It’s salty, sweet, crunchy, and all-around delicious. It’s also no-bake which makes it a whole lot easier than other desserts! So give it a shot and see for yourself.

Ingredients:

  • 2 cups of sugar
  •  1 cup of light corn syrup
  •  1/2 of cup water
  •  1/2 cup of butter
  •  1/2 teaspoon of salt
  •  1 teaspoon of vanilla extract
  •  2 cups unsalted of dry roasted peanuts
  • 1 teaspoon of baking soda

Instructions:

  1. First, line a baking sheet with parchment paper.
  2.  Put the sugar, corn syrup, and water into a medium-sized heavy-bottom pan. Over medium-high heat, bring it to a boil, and stir every once in a while until the sugar has dissolved into the water.
  3. Put in a candy thermometer that doesn’t hit the bottom of the pot, and add in the butter, continuously stirring every once in a while.
  4. When the mixture reaches 280 F put in the salt, vanilla extract, and peanuts. Stir more rapidly.
  5. Once the mixture is up to 300 F, turn off the heat, stir in the baking soda carefully, and then immediately pour it onto the baking sheet. Spread it evenly and cool.
  6. Once it’s totally cooled, break it into pieces, store, or eat right away!
