The Best Tuna Salad Sandwich

With summer fast approaching, yhe warmer months are the perfect time for salad and sandwiches, so why not combine the two? These tuna salad sandwiches are delicious and wholesome, and will have you eating in just 15 minutes.

Ingredients

2 cans (6 oz each) tuna in water

1 stalk celery, chopped

1 small onion, peeled and diced

½ cup mayonnaise

1 teaspoon lemon juice

¼ teaspoon black pepper

¼ teaspoon salt

8 slices good bread, eg. ciabatta

Instructions

Mix all ingredients together except the bread in a medium-sized bowl.

You can refrigerate the salad and when ready to serve, simply spread the salad onto 4 slices of bread. Top with the other 4 slices to make a sandwich. Cut in half, and serve.

This recipe can be adapted for vegans. Simply replace the tuna with cooked chickpeas of about the same amount, and use vegan mayonnaise instead of regular.

Another great addition to this tuna salad is chopped pickled cucumbers, as well as various soft herbs. A great choice is a dill, which complements the tuna. Basil is also a good addition. If you do add basil, consider adding halved baby tomatoes.
