Try Making These Delicious Cauliflower Toasts

Ingredients

  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Medium cauliflower, cut into 8 1/2-inch-thick slices/steaks
  • 1/2 cup golden raisins
  • 1/4 cup white wine (optional) or water
  • 1/4 cup shelled pistachio nuts
  • 8 1/2-inch-thick slices sourdough bread
  • 8 slices melting cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix garlic, salt, and pepper together in a bowl. Add cauliflower slices and coat.
  3. Arrange cauliflower on a baking sheet. Bake for 25 minutes, turn, and bake another 10 to 20 minutes, until softened and roasted. Set aside to cool.

  1. Soak raisins in wine or water for 10 minutes. Drain.
  2. Dry-roast pistachios in a small pan, cool, then roughly chop.
  3. Place the bread on the baking sheet and arrange the cauliflower on the bread, cutting it to fit as needed. Sprinkle with pistachios and raisins, and top with the cheese.
