Watermelon virgin cocktail
This aqua Fresca (fresh water in Spanish) is the simplest way to get your watermelon freshness and replenish your hydration levels in one go. Add 4 cups of diced watermelon to a blender with 1 cup of water.
Add ½ teaspoon of sugar (or more, as desired). Strain into a jug, and mix in the juice of 2 limes. Place in the refrigerator until cold. Serve as is, or with a touch of sparkling water.
Watermelon & feta salad
For this Mediterranean favorite, combine pieces of watermelon with feta and whatever soft fresh herbs you have, such as mint or basil. Drizzle with olive oil and balsamic vinegar for a deliciously refreshing salad.
Watermelon Salsa
Dice watermelon small, and add jalapenos, basil, cilantro, red onion, mango and any other salsa ingredients you might have. Pour over lemon or lime juice, sprinkle with salt, and combine. Let rest for 30 minutes before enjoying with fish or chicken.
