Pasta carbonara is such a decadent and delicious dish, but it can get pretty heavy with all the ingredients. To lighten it up, why not make it with zucchini noodles instead? This recipe is sure to satisfy and won’t leave you feeling too heavy afterwards.
Recipe
Spiralize two zucchinis and leave them to the side.
Slice up some bacon into pieces and cook them until the fat is rendered out, then remove them from the pot.
Chop up an onion and a couple of cloves of garlic and cook them in the bacon fat.
In a separate bowl, add 2 eggs as well as 2 egg yolks and mix them together. To that, add 3/4 cup of Parmesan cheese, 3/4 cup of heavy cream, and whisk everything until it’s combined.
Add the bacon back into the sauce as well as some freshly cracked pepper and defrosted peas if you want a nice pop of green.
Finally, add in the zucchini and stir it so every noodle is covered in the sauce.
Finish the dish with an extra sprinkling of cheese and some fresh basil and you’re ready to dig in!
