Chef-Worthy Herb Roasted Cherry Tomatoes

What turns roast cherry tomatoes into a sublime and chef-worthy dish? How do you make them unforgettable? You need some complimentary herbs, spices and olive oil to upgrade these to menu worthy.

You can enjoy roast cherry tomatoes for breakfast, lunch or supper and even as a sublime, low-calorie snack. Hot, cold or room temperature – these nutritious beauties will upgrade any meal. It is a super versatile dish that can be enjoyed on its own, added to a crusty slice of bread, tossed into salads, served with eggs or meat, for a taste of the Mediterranean.

Ingredients

  1. 3 Tablespoons olive oil
  2. 2 Teaspoons minced garlic
  3. 2 Pints of Cherry/Grape tomatoes
  4. 1 Teaspoon kosher salt
  5. ¼ Teaspoon freshly ground black pepper
  6. 2 ½ Tablespoons chopped fresh basil
  7. 2 ½ Tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 375F
  2. Place tomatoes, garlic, oil and spices in a baking dish and toss together
  3. Roast for about 35 minutes until to stores are golden, bursting and caramelized.
  4. When done, add the herbs (They don’t need baking!)
  5. Let cool
  6. Dig in!
