Tired of the way you make Fried rice? Then you have to try this recipe from Phaidon’s Quick and Easy Thai Recipes. Although the recipe features many seafood ingredients like crab meat, fish and oyster sauce, one can hardly associate it with the sea in any way.

To add some spice and intense flavor to the dish, garlic, onion, and scallion are used. To add some sweetness to the dish, the recipes also calls for granulated sugar, jasmine rice, and carrots. Surprisingly, this dish also incorporates egg and a couple of ingredients, like lime juice and diced tomatoes for that extra bit of tang.

Preparation and cooking couldn’t be easier. Heat some oil in a wok over medium heat. Add some garlic and sauté for about 30 seconds. Then add the rice, crabmeat, onion, carrots, tomato and chopped scallions. Stir the mix for around two minutes or until it’s cooked through.

To bring out the Thai in the dish, add some soy sauce, oyster sauce and a bit of sugar and stir  for another 2 minutes. Now, all that is left to do is to transfer the mixture to a serving dish and season with lime.

 Enjoy!
