Making salads is easy, fun, and a great choice for breakfast, lunch or dinner. Today we decided to upgrade your menu with a very unique but super-tasty recipe. This chicken almond salad will satisfy all of your cravings. The whole thing will take you around 50 minutes to make, but 45 of those are cooking the chicken in the oven. This recipe is meant for 4 servings, which means you can save it for later or share it with your family.

  • 2 chopped green onions
  • 1 teaspoon Dijon mustard
  • 1 8-oz boneless, skinless chicken breast
  • 1/4 cup sliced almonds
  • black pepper
  • 1/2 cup non-fat plain Greek yogurt
  • 1 diced celery stalk

Set the oven to 350 F degrees and prepare a baking dish.

Add the chicken in the dish and spice it with the black pepper. Cover the dish with foil.

Place it in the oven and cook for 30 to 45 minutes. The meat should be completely cooked when you remove it from the oven.

You can leave it to cool down a little, then start slicing it.

Combine the onion, celery, chicken and almonds together in a bowl. Include the mustard, yogurt and a little pepper. Mix everything very well. Enjoy your chicken almond salad.
