Vietnamese chicken pho can now be a part of your everyday meals thanks to this original recipe.

Ingredients:

For the chicken pho, you’ll need 1 finely chopped onion, 1 cinnamon stick, 1 small whole chicken, 3 whole star anise, 1 tablespoon oil, sliced ginger, 1 teaspoon salt, 1 tablespoon coriander seeds, 400 g. dried flat rice noodles, 1 teaspoon coconut sugar, 2 tablespoons fish sauce, 1/4 teaspoon Chinese five-spice powder, 1/4 teaspoon black pepper corns.

For the garnish you should get 1 cup thai basil, 4 spring onions, 1 cup fresh coriander, 6 lime wedges, 2 cups mung bean sprouts, 1 cup fresh Vietnamese mint, 1 chili freshly chopped.1

Instructions:

Heat the oil in a pan, and start cooking the ginger with the onions for a few minutes. Cut the chicken into four pieces. Cook it in a pot together with spices, ginger, onions, salt, and fish sauce. When the water starts boiling, you can let it simmer for about 25 minutes. Once the chicken is done you can take it out of the water and divide it into small pieces.

Combine the broth and the bones, let them simmer for 25 to 60 minutes. Do not let it simmer. While you’re waiting, you can cook the noodles. Take out the bones from the broth and you can mix the noodles with the chicken, broth, mung beans, carrot, fresh chili, and fresh herbs. Top everything off with chili sauce and lime wedges.
