How to Make Delicious Vegan Shortbread Biscuits

Shortbread biscuits are incredibly simple in their flavor and construction but absolutely delicious in the right setting! Normally made with butter to give them a rich and indulgent flavor, this recipe makes them vegan-friendly by using coconut oil as a substitute. Here’s how you can easily make delicious vegan shortbread biscuits that will go down a treat as an afternoon snack.


  • 1 cup solid coconut oil
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • A pinch of salt


  1. Preheat your oven to 350°F (175°C). Mix the solid coconut oil and powdered sugar in a bowl until they’re creamy.
  2. Add the vanilla extract and a pinch of salt, and mix them in. Gradually add the flour to the mixture, stirring until it forms a soft dough.
  3. Roll out the dough on a floured surface until it’s about 1/4 inch thick. Use cookie cutters to cut out shapes from the dough.
  4. Place the shaped dough on a baking sheet lined with parchment paper. Bake for 10-12 minutes until the edges are slightly golden.
