Chicken piccata is a wonderful Italian classic that you can make at home so easily!
Ingredients
- 4 chicken breasts butterflied and cut in half
- 2 lemons
- 3/4 cup of all purpose flour
- 1/4 cup plus 1 teaspoon of vegetable oil
- 1 minced shallot
- 1 minced clove of garlic
- 1 cup of chicken broth
- 3 tablespoons of unsalted butter cut into cubes
- 2 tablespoons of capers
- 1 tablespoon of parlsey
- 2 teaspoons of salt
- 1/2 teaspoon of pepper
Recipe
- Place the chicken into a bowl and season with salt and pepper.
- Cut half a lemon, half it again, and cut it into pieces. Juice the other half and the whole lemon.
- In a shallow dish, put the flour in and lightly dredge each piece of chicken.
- Over medium-high heat, heat up 2 tablespoons of oil in a skillet until it’s smoking. Working in batches, put in the chicken and turn the heat down to medium. Cook on each side for 2-3 minutes. Repeat for the other batch.
- Add another teaspoon of oil and fry the shallot for 1 minute, and add in the garlic for 30 seconds… Pour in the broth, lemon juice, the lemon slices, and bring it to all to simmer.
- Once the sauce has thickened slightly, add in the chicken, coating it in the sauce for a few minutes.
- Turn off the heat, whisk in the butter, and add in the capers and parsley.
