Ingredients

  • 4-quart water
  • 3/4 cup of extra-virgin olive oil
  • 3/4 teaspoon kosher salt
  • 1 tablespoon of Meyer lemon zest
  • 3 medium shallots
  • 1 teaspoon honey
  • 1 pound dried fettuccine
  • 1 cup heavy cream
  • 3 ounces grated Parmigiano-Reggiano cheese
  • 2 tablespoons of fresh Meyer lemon juice
  • 1/2 teaspoon of freshly ground black pepper

Garnish

  • 1/3 cup of Meyer lemon Supremes, for garnish

Method

  1. Get a large pot and pour 4 quarts of water. Bring to a rapid boil and add the kosher salt.
  2. Heat the lemon zest and oil in a large skillet. Medium heat is ideal. Add the salt, shallots, and honey and cook until they are soft and the oil heats up. Whisk in cream and allow to simmer for about two minutes.
  3. Cook the pasta in boiling water until it is soft and drain the liquid. Reserve some liquid for later. Add lemon juice and toss to combine. This makes it easier for the pasta to absorb the juice.
  4. Stir the cheese and the leftover cooking liquid in a skillet. Add cream sauce, pasta, and mix to coat. Divide into different bowls and garnish with Meyer Lemon Supremes and pepper.
