Wintery days often have us craving comforting, warming foods. This tasty sausage casserole is ideal for a satisfying meal on a cold day and is also packed with vegetables to ensure a good intake of vitamins and minerals. It’s super simple to make and is great to feed a large crowd. You can freeze this and store it for an easy ready-to-go meal.
Ingredients
(Serves 4-6)
- 8-10 sausages
- 2 large white onions
- 3 cloves garlic
- 3 large carrots
- 1 small swede
- 3 sticks of celery
- 1 cup frozen peas
- 2 cups stock
- 1 tablespoon flour
- 2 tablespoons oil
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper, to taste
Instructions
- Chop the onions, carrots, swede, celery, and garlic.
- Add half the oil to a large pot and place on a medium heat.
- Add the onions, carrots, swede, and celery and fry for 10 minutes.
- Add the sausages, garlic, thyme, rosemary, salt, and pepper and fry for a further 5-10 minutes.
- Add the rest of the oil and then the flour, mixing thoroughly.
- After 5 more minutes add the frozen peas and the stock and increase the heat.
- Leave to simmer for 10-20 minutes, ensuring the sausages and the veg are all cooked all the way through.
- Serve hot with mashed potato or a side of your choice.
