The Best Homemade Breakfast Burritos

Breakfast Burritos are a festive, filling, and fragrant breakfast across many cultures, and easy to make in a number of ways. If you find yourself skipping breakfast in the morning, then this one is for you! These burritos are easy to meal prep and grab on your way to work. Keep reading for a hearty and easy breakfast burrito recipe!

Ingredients

  • 2 diced potatoes – yukon and/ or sweet potatoes
  • 1 diced red pepper
  • 1 sliced white onion
  • A spice blend of choice
  • 2/3Beaten eggs
  • Avocado oil
  • Salsa and avocado on the side
  • Tortillas of choice

Instructions

  • Preheat oven to 425F degrees.
  • Line a baking sheet with parchment paper and place your veggies on it.
  • Spray them with avocado oil and add spice blend of choice, mixing them to fully coat with the spices.
  • Place in the oven until fully roasted
  • Beat your eggs and scramble them in a frying pan
  • When veggies are done place them in your burrito with eggs, and melt cheese on top if desired! Add salasa and avocado and enjoy!
