Gravy is one of those sauces that can go with almost everything. Whether you’re serving it with biscuits, alongside a traditional roast dinner, or even over your fries, its savory taste and smooth texture make it a winning addition to many meals. If you’re looking to make your own, check out this recipe for the best-ever gravy.

Ingredients:

  • 1 leek
  • 1 carrot
  • 1 stick of celery
  • 1 onion
  • 1 vegetable stock cube
  • 1 tbsp butter
  • 1/2 cup of red wine
  • 1/2 cup of chickpeas
  • 1 tbsp of cranberry sauce
  • 1 cup of water

Instructions:

Finely slice the vegetables, place them in a large non-stick pan, and dry fry for 10-15 minutes, until they are softened and beginning to turn golden brown (use a splash of water to prevent burning if needed).

Stir the butter into the pan, cook for 5 minutes and then add the water, wine, cranberry sauce, chickpeas, and the stock cube. Let the liquid cook away, then pour into a food processor and blend until smooth. To serve, reheat for 5 minutes.

This vegetarian recipe is easily adapted, if you have meat juices or stock simply reduce the amount of water you add into the recipe. Try replacing the chickpeas with cooked chestnuts, for a sweeter, creamier gravy.
