We just can’t get enough of hummus. Its creamy, dreamy goodness is a staple of our diets. The good news is that it’s so easy to whip up at home, you can save money and get the most delicious flavors if you do-it-yourself. Here’s how.
Ingredients
2 cans chickpeas
4 garlic cloves, unpeeled
1/3 cup fresh lemon juice
1 teaspoon salt
2/3 cup tahini
1/4 teaspoon ground cumin
Method
- Drain and rinse the chickpeas. Place in a pan and cover with 2 inches of water. Bring to a boil, reduce to a simmer and cook, uncovered, for around 20 minutes, or until the chickpeas are starting to fall apart. Drain in a mesh sieve.
- Process together garlic, lemon juice, and salt until coarse. Allow standing for 10 minutes.
- Strain garlic mixture through a fine sieve and collect liquid. Place liquid in a food processor, and discard solids. Add tahini and combine.
- Turn on motor, and add up to ¼ cup of ice water little by little until the mixture is pale, smooth, and thick.
- Add chickpeas and cumin, and process until smooth. Taste and season with salt, lemon juice, and cumin, if desired.
