Keep Off the Carbs with These Cream Cheese Cookies

News flash: cutting out carbs doesn’t mean you have to cut out cookies.

Phew!

If you’re trying to keep your summer figure but have an undeniable craving for something sweet and crumbly, these cream cheese cookies are going to be your new best friend.

Ingredients

• 1 cup butter
• ¾ cup low carb sugar substitute or another sugar substitute
• 4 ounces softened cream cheese
• 1 egg
• 2 cups almond flour
• ½ cup coconut flour
• 1 tsp vanilla extract

Method

  1. Cream the butter and sweetener until light and fluffy.
  2. Beat in the cream cheese.
  3. Add in the egg.
  4. Stir in the flours, then mix in the vanilla.
  5. Chill the dough for at least 4 hours.
  6. Roll the dough into a log and slice or spread out and cut into shapes.
  7. Bake at 350F / 180C until cookies begin to brown (about 8-10 minutes for pressed cookie or 10-12 minutes for slices). Cook longer for crisper cookies.
